All About Breads

What is more pleasant than the smell (and taste!) of freshly baked bread?  Join us for a new cooking class from Pastry and Baking Artist, Kristen Cirolia, as she takes you on an Adventure in Bread Making.  You’ll learn the science and the secrets behind baking breads of all types – from basic dinner rolls to classic Italian flatbreads, even laminated doughs.  With 5 breads in 5 weeks, soon your kitchen will have that delicious bakery smell all year-round.

Cake Decorating III – Fondants

The last set in this series of cake decorating classes is for the advanced student. Here you will learn techniques involving fondant. From covering a cake board and cake in fondant, to floral inlay, and brushed embroidery, this class will provide a skill challenge to advanced decorators, and those new to the world of fondant. We will not be abandoning our skills with royal and butter cream either. There will be techniques involving both, and we will learn cake construction both tiered and stacked.  Instructor: Cale

Market Fresh

Have you ever gone to the Farmer’s Market and seen all of the fresh produce, and wish that you had some great recipe to put those products to good use?  Chef Brian Floyd will lead a class on a trip to the Market.  Later that day the class will get back together to prepare several mouthwatering dishes using the ultra fresh products picked up at Market that morning.  Find out the Chef’s secrets to picking the best produce, and to take advantage of the best products of the season.

Make a Cookie Blossom Bouquet

Everyone loves flowers, especially when they are edible. On day one students learn the perfect recipe for making cookie blossoms, and how to roll, prepare, and bake. On the second day, students learn decorating techniques and take home a completed bouquet. Make great gifts. A great project for adults and families!  Instructor: Cale

Kids in the Kitchen (8 – 12 Years)

Does the next Emeril or Rachael Ray live with you?  Are you hearing “I’m bored,” and “There’s nothing to do,” followed by “I’m hungry?”  Well it’s time to get cooking.  Your child will learn basic kitchen fundamentals and will participate in preparing their own lunch.  Pierpont C&TC’s Chefs and Culinary Arts students will supervise this fun-filled session.

Creative Canning

This tradition has been around for years, but the reasons for canning today are different than the reasons people canned foods years ago.  Whether you grow your own produce or purchase locally, we can’t enjoy all of our fresh fruits and vegetables all at once.  So why not preserve that fresh, home grown flavor from your garden for use all year long – preserving your harvest for wintertime soups, sauces and other creations.  We will can tomatoes and salsa using the water bath method and green beans using the pressure cooker, and even an assortment of jams & jellies.  You will complete your own product from start to finish and take home the end results to enjoy later.

Cooking Italian

Food.  Language.  And Culture…  And Food!  Come spend 6 nights with our famed Italian instructor, and renowned cook, Rose Mazza, as she takes you on a culinary tour of Italy.  Along the way you will learn to prepare authentic dishes while being inspired by one of the world’s most romantic and historical cultures.  With all the cooking, eating and fun, don’t forget that this is also a language course – so don’t worry, this is one place where it’s okay to talk with your mouth full!

Signature Chef’s Auction

Cake Decorating I – Decorating Basics

In this basic cake decorating class you will start with baking, leveling, torting, and filling the perfect cake, different types of decorating bags, tips, and their uses. Butter cream icing in three consistencies will help to teach position, pressure, and color mixing. This is a hands-on course so be prepared to bring your baked homework and get a little messy. Borders, roses, transfers, drop flowers, and figure piping will create a beautiful cake and the beginning of many masterpieces to come.  Instructor: Cale

Cake Decorating II – Royal Icing and Flower Making

In this icing class you will primarily be working with royal icing, but also building on the techniques learned in "Cake Decorating Basics.” Royal icing is a very fun and time-saving medium, in that decorations may be made in advance and, if stored properly, have a very long shelf-life. Daisies, pansies, violets, and roses are just a few of the flowers that you will master during this course. You will also be working with color flow and butter cream. This is a hands-on course so be prepared to have plenty of sugary homework.  Instructor: Cale
